Ingredients
1 lb. large shrimp, peeled
2 cup cherry tomatoes
2 cloves garlic
1/4 cup finely chopped fresh basil
1 lb store-bought gnocchi, uncooked
4 ears corn, shucked and kernels removed from cob (or 1.5 cups canned or frozen corn, thawed)
1/4 cup unsalted butter, cut into cubes
Grated Parmesan, for serving
3/4 cup dry white wine, such as Sauvignon Blanc
Kosher salt
Red pepper flakes
Freshly ground black pepper
Directions
- Boil water and cook gnocchi per package instructions. Drain completely and return gnocchi to stove.
- To the pot, add butter, garlic, and wine then stir to combine.
- Add shrimp, tomatoes, and corn to pot, season with salt and black pepper.
- Cook, stirring occasionally, until shrimp are cooked through, approximately 15 minutes.
- Remove from heat. Garnish generously with parmesan cheese, basil, and red pepper flakes.
